Creamy Pork Medallions

Creamy Pork Medallions in the GoSun Sport



  • 6 Swiss brown mushrooms thinly sliced
  • 1/2 leek stalk sliced and separated
  • 1 teaspoon salt
  • 2 tablespoons butter diced
  • Pork tenderloin
  • 3 teaspoons paprika
  • Salt & pepper to season
  • 1 tablespoon olive oil
  • 1/4 cup thickened cream
  • 1/2 cup chicken stock
  • 2 teaspoons thyme
  • 1 teaspoon cracked pepper
  • 1 teaspoon salt


  1. Evenly distribute butter in the GoSun tray. Add leeks to the tray, then add mushrooms.
  2. Place the tray in the GoSun solar cooker and cook for approximately 20 minutes.
  3. Meanwhile, slice the pork fillet into medallions. Coat with paprika and season with salt and pepper on all sides. Drizzle with olive oil.
  4. Remove tray from cooker and push mushrooms and leeks to one end. Add medallions to the tray and replace the tray back in the cooker and cook for another 20 minutes.
  5. While pork is cooking, in a bowl, combine cream, chicken stock, thyme and salt and pepper with a whisk.
  6. Re-arrange leek and mushroom on top of pork medallions. Slowly pour in the cream mix.
  7. Replace tray in cooker and cook for approximately 20 minutes.
  8. Plate up and enjoy.
